Starting in August, Delta’s Business travelers on route to Mexico will get to experience the new flavors of our Mexican inspired menu. If I could summarize in three words what great food means to me, I would boil it down to discovering, loving and sharing. My passion for food has driven me to a world of discoveries – from falling in love to wanting to share my culinary experiences. And now, I get to present the creations that come out of my kitchen on-board Delta’s Mexico-bound flights.
In my kitchen, all that starts with love ends with great flavors. In my case, my passion for Mexican food started with love. My marriage to David Martinez, who is Mexican, opened me to discover the flavors of his native land. Traveling with David through Mexico I was captivated by the variety of flavors from region to region. When it comes to textures, colors and an abundant pallet of spice, Mexico has it. From the crunch of its jícama to the freshness of its fruits and sea foods and the never-ending possibilities that its chilies present, Mexico has a world of flavors to be discovered and shared.
When Delta approached me to re-design the menu for the Mexico route, I knew I was in for a delightful challenge. My main hurdle was condensing all the delicious dishes and flavors I have fallen in love with through the years. How to ever forget my first trip to Oaxaca? It was there where I tasted Mole Negro for the first time, and that was an experience akin to falling in love. Yes one’s palate can fall in love, over and over again. From region to region, I challenged myself to find the best Tacos al Pastor, to explore the insane flavors of Puebla, to dive into the freshness of Veracruz’s seafood… Yes, with each bite I fell in love more and more with Mexican cuisine and with its people and here I am, honored to have the opportunity to share my culinary perspective on Mexican food with Delta’s Business customers.
