Cabin Pressure Cook-Off // Meet The Chefs

Before we get cooking, we want to help you get to know the esteemed chefs who will be competing in the Cabin Pressure Cook-Off. Meet our first two contestants, Chef Hugh Acheson and Chef Linton Hopkins. These two Georgia chefs are both inspired by the bounty of fruits and vegetables available in their home state, and reflect that fresh simple notion on every plate they serve. We asked the chefs a few questions about their culinary experiences and they had some pretty interesting answers for us!
Taking Off: Lets get started with where you are each from.
Hugh Acheson: I grew up in Ottawa, Canada, but now live with my family in Athens, Georgia.
Linton Hopkins: I’m an Atlanta, Georgia native.
TO: Can you tell us about your favorite culinary vacation?
HA: I love the food in Spain. It’s definitely a favorite.
LH: France (so far). During white asparagus season, I ate at Arpege and cooked in a small house in the Loire Valley with my wife Gina.
TO: Have you ever had a cultural food experience - either here or abroad - that went bad?
HA: I can remember eating a pork stew in the Yucatan when I was 16 and realizing that they had not removed the hair from the pork. Ewww…
LH: There was a time I was dining at a traditional Indian restaurant with my father at the age of 15; when presented the relish tray I quickly ate a pickled pepper, which turned out to one of the hottest things I have ever eaten. I spent the next 10 minutes with a mouth full of ice.
TO: Where can we find you in your hometown when you are not at your restaurant?
HA: I’ll likely be at home - call before you come over.
LH: At home cooking with family; I am a pretty laid back family guy.

Chef Linton Hopkins is the Chef/Owner of Restaurant Eugene and Holeman & Finch Public House in Atlanta
